Oatmeal Chocolate Chip Cookie Bars (Low Fat, Vegan, clean eating, High Fibre)
- 1 1/2 cup unsweetened applesauce
- 1/2 cup Honey, (or sweetener of choice)
- 1 1/2 tsp vanilla
- 3 tbsp oil
- 1/2 tsp cinnamon
- 1 1/2 tsp baking soda
- 1 1/2 tsp baking powder
- 2 cup whole wheat flour (or other flour)
- 2 Tbsp flax seed meal
- 2 cup oats
- semi-sweet chocolate chips (I don't measure, so however much you prefer, you could use raisins if you prefer)
- Preheat oven to 375˚F.
- Mix applesauce, Honey, vanilla, oil, and cinnamon in a large bowl.
- In a small bowl, mix flour, flax seeds, baking soda, and baking powder.
- Gradually add dry mix to the wet mix.
- Stir in oats gradually.
- Mix in chocolate chips.
- Spread mix into a large (greased) pan.
- Bake in oven for 25 minutes. Enjoy.
