1/2 yellow onion, chopped
1 clove garlic, minced
1 bay leaf
2 T chopped fresh flat-leaf parsley
2 tsp chopped fresh thyme
1 pound lean ground beef
1 pound lean ground turkey
2 large eggs, lightly beaten
2 Tbsp chia seeds (mixed into the eggs)
3/4 cup Flax seed meal
1 cup sugar free tomato sauce
1 T Worcestershire Sauce (you can make your own Paleo One here)
2 tsp Salt
1/2 tsp ground black pepper
Directions
- Preheat oven 350 degrees F. Saute the onions, peppers, parsley, thyme, bay leaves, and garlic until soft and translucent. Let cool slightly.
- Beat eggs, chia seeds and flax seed meal slightly and add to meat as well salt, and pepper.
- Mix in the sauteed veggies by hand. Form into a long loaf on an oiled parchment paper lined baking sheet and coat top with the tomato sauce.
- Bake for an hour and test for doneness. Depending on the shape of your loaf, it may need another 15 minutes.
