Avocado-Chocolate Chip Muffins (whole grain, clean eating, low fat)
- 1 3/4 cups whole wheat flour
- 1/2 cup Honey (or sweetener of choice)
- 1 tsp baking powder
- 1/2 tsp salt
- 2 large eggs
- 2 tbsp applesauce
- 1 rip avocado, peeled, pitted and mashed
- 1 ripe banana mashed
- 1 tsp pure vanilla extract
- 1/2 cup dark chocolate chips (70% or greater)
- Preheat oven to 350, line muffin tin or spray with olive oil
- In large bowl combine flour, honey, baking powder and salt
- In medium bowl whisk eggs, applesauce, avocado, banana and vanilla.
- Add flour mixture and stir to just combined.
- Fold in chocolate chips
- Fill 12 muffin tins and bake about 25 minutes
