Chocolate Muffins (dairy free, egg free, fat free, whole grain, clean eating)



  • 1 1/2 cups whole wheat flour
  • 1/3 cup cocoa powder
  • 1 cup honey (or sweetener of choice)
  • 1 teaspoon baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup brewed coffee
  • 1 Tbsp. white vinegar
  • 1/3 cup applesauce
  1. Preheat the oven to 350 F. 
  2. Line a 12-cup muffin tin with cupcake liners and set aside.
  3. In a large mixing bowl, whisk wet ingredients together. 
  4. In another bowl, sift together the dry ingredients and then add them to the wet, mixing until just combined. 
  5. Pour the batter into the prepared cups, filling each about 2/3 full. 
  6. Bake for 17-20 minutes, or until a toothpick inserted into the center of a cupcake emerges clean.
