Chocolate Muffins (dairy free, egg free, fat free, whole grain, clean eating)
- 1 1/2 cups whole wheat flour
- 1/3 cup cocoa powder
- 1 cup honey (or sweetener of choice)
- 1 teaspoon baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 cup brewed coffee
- 1 Tbsp. white vinegar
- 1/3 cup applesauce
- Preheat the oven to 350 F.
- Line a 12-cup muffin tin with cupcake liners and set aside.
- In a large mixing bowl, whisk wet ingredients together.
- In another bowl, sift together the dry ingredients and then add them to the wet, mixing until just combined.
- Pour
the batter into the prepared cups, filling each about 2/3 full.
- Bake for
17-20 minutes, or until a toothpick inserted into the center of a
cupcake emerges clean.
