Quick One Pot Pasta (vegetarian, low fat)
- 1 cup onion, chopped
- 2 cloves garlic minced
- 1 bell pepper, chopped
- 1 cup chopped mushrooms
- 1 cup chopped zucchini
- 1 can diced tomatoes
- 1 3/4 cup water
- 1/2 cup dry tvp
- 2 tbsp Italian herb seasoning
- crushed red pepper flakes to taste
- 2 cups shell pasta
- Sautee veggies in a little oil or water until they are tender.
- Add can of tomatoes, italian seasoning, water, tvp, red pepper flakes, and pasta to pot.
- Bring to a boil, than reduce heat and simmer about 10 minutes, stirring occasionally.
- Until pasta and tvp have absorbed extra liquid.
