Another Quick and Easy One Pot Pasta (whole grain, low fat, vegetarian)
- 340 grams (1 package) Whole Grain Spaghetti or Linguine
- 2 tomatoes, chopped
- 1 cup chopped zucchini
- 1 onion, thinly sliced (about 2 cups)
- 6 cloves garlic, thinly sliced
- 1/2 teaspoon red-pepper flakes
- a little fresh basil leaves torn
- 2 tablespoons extra-virgin olive oil,
- salt and pepper
- 2 1/2 cups water
- 2 cups vegetable broth
- Lots of freshly grated Reduced Fat Parmesan cheese, for serving (or a vegan variety)
- Combine noodles, tomatoes, zucchini onion, garlic, red-pepper flakes, basil, oil, 2 teaspoons salt, 1/4 teaspoon pepper, and water in a large straight-sided skillet.
- Bring to a boil over high heat. Boil mixture, stirring and turning noodles frequently, until noodles is al dente and water has nearly evaporated, about 9 minutes.
- Season to taste with salt and pepper, divide among 4 bowls, and garnish with basil. Serve with Parmesan.
