No Bake Chocolate Oat Bars


  • 1 cup butter, 
  • 1/2 cup brown sugar, 
  • 1 tsp vanilla, 
  • 3 cups quick cooking oats, 
  • 1 cup choc chips, 
  • 1/2 cup peanut butter. 
  1. Grease a 9x9 inch pan. 
  2. Melt butter in a lg saucepan over med heat. 
  3. Stir in brown sugar & vanilla. 
  4. Mix in oats. 
  5. Cook over low heat for 2 or 3 minutes or until well blended. 
  6. Press half of mixture into the bottom of the prepared pan. 
  7. Reserve the other half for topping. 
  8. Meanwhile:
    1. melt the choc chips and PB in a small saucepan over low heat til smooth. 
    2. Stirring frequently.pour the choc mixture over the crust in the pan and spread evenly. 
  9. Crumble the remaining oat mixture over top.
  10. Press down gently. Cool on counter for a while. 
  11. Then refrigerate for 2 or 3 hours or until firm enough to cut in squares!
