Sausage, Cabbage, and Potato Hash
- 1 pound sausage, sliced
- 1 medium onion, chopped
- 1 green bell pepper, seeded and chopped
- 4 - 6 potatoes
- 1 small head of cabbage
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- Cut sausage into bite-size pieces and brown in stew pot.
- Cut cabbage and potatoes into bite-size squares.
- Add potatoes to stew pot with sausage to brown a bit.
- Add the onion and green
pepper to the drippings in the skillet.
- Simmer just until potatoes are done. (Don't overcook or potatoes will fall apart, although, I like it that way lol).
optional topping:
- 1 cup milk
- 2 eggs, beaten
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 4 slices bread, cut into cubes
- 1/2 cup butter, sliced
- Whisk milk, eggs, salt, and
pepper together in a bowl; add bread cubes. Set aside until bread
absorbs some liquid, 1 to 2 minutes; pour over the cabbage mixture. Top
with butter slices.
- Omit last step above and bake in preheated oven until the potatoes are tender and the top is lightly browned, about 45 minutes.
