Sausage, Cabbage, and Potato Hash

 
  • 1 pound sausage, sliced
  • 1 medium onion, chopped
  • 1 green bell pepper, seeded and chopped
  • 4 - 6 potatoes
  • 1 small head of cabbage
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  1. Cut sausage into bite-size pieces and brown in stew pot. 
  2. Cut cabbage and potatoes into bite-size squares. 
  3. Add potatoes to stew pot with sausage to brown a bit.
  4. Add the onion and green pepper to the drippings in the skillet. 
  5. Simmer just until potatoes are done.   (Don't overcook or potatoes will fall apart, although, I like it that way lol).
optional topping:
  •     1 cup milk
  •     2 eggs, beaten
  •     1 teaspoon salt
  •     1/2 teaspoon ground black pepper
  •     4 slices bread, cut into cubes
  •     1/2 cup butter, sliced
  1. Whisk milk, eggs, salt, and pepper together in a bowl; add bread cubes. Set aside until bread absorbs some liquid, 1 to 2 minutes; pour over the cabbage mixture. Top with butter slices.
  2. Omit last step above and bake in preheated oven until the potatoes are tender and the top is lightly browned, about 45 minutes.
