- 1 cup long grain rice, cooked (I also like rice noodles with this)
- 1+ cup broccoli, with ends cut (I also add whatever veggies strike my fancy here)
- 2 tbsp chunky peanut butter
- 2 tbsp soy sauce
- 1 tbsp sweet red chili Asian sauce
- 1/4 tsp ground ginger
- 1/2 teaspoon chilli powder
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon garlic powder
- 1/4 tsp hot sauce, or to taste
- 1 tbsp sesame seeds
- In a pan, cook the onion, broccoli and whatever veggies you are using for 4 minutes or so – until broccoli is tender-crisp.
- While this is cooking, combine sauce ingredients, heat in a pan and stir well. Cook until well combined and heated through.
- Stir in the peanut butter sauce in with broccoli and veggies.
- Mix well and serve on top of the rice or rice noodles, sprinkle sesame seeds over top.
(I have crisped up tofu and added this to this recipe as well and it is REALLY good! You do this by pan-frying the tofu in a non-stick skillet pan until the tofu is lightly
browned. You may add a teaspoon of oil, or you can just pan fry with no
oil in a nonstick pan. Remove from pan and add back in at the last minute.)
