Stir-Fry with Peanut Sauce (vegetarian, lower fat, high fiber)


  • 1 cup long grain rice, cooked (I also like rice noodles with this)
  • 1+ cup broccoli, with ends cut (I also add whatever veggies strike my fancy here)
  • 2 tbsp  chunky peanut butter
  • 2 tbsp  soy sauce
  • 1 tbsp sweet red chili Asian sauce
  • 1/4 tsp ground ginger
  • 1/2 teaspoon  chilli powder
  • 1/2 teaspoon  cayenne pepper
  • 1/2 teaspoon  garlic powder
  • 1/4 tsp hot sauce, or to taste
  • 1 tbsp  sesame seeds
  1. In a pan, cook the onion, broccoli and whatever veggies you are using for 4 minutes or so – until broccoli is tender-crisp.
  2. While this is cooking, combine sauce ingredients, heat in a pan and stir well. Cook until well combined and heated through.
  3. Stir in the peanut butter sauce in with broccoli and veggies. 
  4. Mix well and serve on top of the rice or rice noodles, sprinkle sesame seeds over top.
(I have crisped up tofu and added this to this recipe as well and it is REALLY good!  You do this by pan-frying the tofu in a non-stick skillet pan until the tofu is lightly browned. You may add a teaspoon of oil, or you can just pan fry with no oil in a nonstick pan. Remove from pan and add back in at the last minute.)

Saturday Photohunt: Ink and Traces

The Saturday PhotoHunts for this week are: Ink and Traces.

Ink was easy, I have lots of pictures of my kid's homeschool work and some of it is ink.  But traces was harder for me.

This is what I came up with, if you look closely, you can see traces of the ink she used along with crayon to decorate her craft project.

In this one, you can see ink in the work over her shoulder and you can see how her big sister was practicing tracing her letters.  

In this one, you can see ink in the name tags and you can see traces of ink that someone got on my coffee cup.  LOL
