I made pancakes for breakfast this morning. It was a simple recipe
that the girls like. I like that it is easy to keep the ingredients on
hand. I sprinkled a little icing sugar and some syrup on top and the
pancakes were a HUGE hit!
Pancakes
Ingredients
1 1/4 cups all-purpose flour
3 tablespoons white sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 1/4 – 1 1/2 cups water
cinnamon to taste
1 tablespoon oil
Directions
Sift the flour, sugar, cinnamon, baking powder, and salt into a large
bowl. Whisk the water and oil together in a small bowl. Make a well in
the center of the dry ingredients, and pour in the wet. Stir just until
blended; mixture will be lumpy.
Heat a lightly oiled griddle over medium-high heat. Drop batter by large
spoonfuls onto the griddle, and cook until bubbles form and the edges
are dry. Flip, and cook until browned on the other side. Repeat with
remaining batter.
Last night I made a simple macaroni and cheese from scratch to which I
added ground beef seasoned with salt, pepper, garlic, chili powder,
cayenne, and a little hot pepper sauce. It was extremely popular with
everyone, even Rose had seconds and wanted THIRDS!!!
