Leftover Rice Rice Pudding (take three)


I wanted to make a nice warm breakfast for this morning when we had our first snow of the year.  I went through a couple of different recipes I had tried and put them together and came up with the  following.

4 cups of rice (I used leftover brown rice)
2 cups of milk (soy milk, almond milk, or other milks would work here as well)
1/2 cup sugar (feel free to use a sweetener instead)
1/2 cup raisins
1/2 teaspoon cinnamon,
2 eggs

I cooked it on the stove until it got thick and lovely and then put it in the fridge to cool just a little for the girls to enjoy. I put a little syrup on it for them before serving and it was a really yummy!

Low Fat Apple Cake


serves 18 with only 143 calories a serving!

Ingredients:
  • 1 1/2 cups Egg Beaters or liquid egg whites
  • 1 cup applesauce, unsweetened
  • 1/2 cup sugar
  • 1 tsp vanilla
  • 4 cups apples, grated or cut into small bits
  • 2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp cloves, ground
  • 1 tsp cinnamon
  • 1/2 cup raisins
  • 1/2 cup walnuts, finely chopped
Directions:
  1. Preheat oven to 350 F. Spray a 9' x 13' x 2' pan with non-stick baking spray.
  2. Beat together the egg beaters, sugar, and applesauce until light and fluffy. Stir in vanilla and grated apples.
  3. Combine the dry ingredients and fold into the wet ingredients. Fold in the
  4. raisins and walnuts.
  5. Spread in the pan and bake for 45 - 55 minutes or until the cake tests done. Turn the cake out onto a rack and cool completely before cutting into 18 squares.

Cranberry orange/apple relish

Great for Thanksgiving or Christimas!

Ingredients
  • 1 lb cranberries
  • 2 navel oranges
  • 2 apples
  • 1/2 cup sugar
Directions
  1. Grind cranberries and oranges, chop apples-or run all through food processor. Add sugar and mix thoroughly.
  2. You can use 12 oz pkg of cranberries with 1 orange and 1 or 2 apples and 1/3 cup sugar.
