Grain-free Meatloaf with chia and flax seeds (low fat, higher fiber, low carb, paleo)

1/2 yellow onion, chopped
1 clove garlic, minced
1 bay leaf
2 T chopped fresh flat-leaf parsley
2 tsp chopped fresh thyme
1 pound lean ground beef
1 pound lean ground turkey
2 large eggs, lightly beaten
2 Tbsp chia seeds (mixed into the eggs)
3/4 cup Flax seed meal
1 cup sugar free tomato sauce
1 T Worcestershire Sauce (you can make your own Paleo One here)
2 tsp Salt
1/2 tsp ground black pepper

  1. Preheat oven 350 degrees F. Saute the onions, peppers, parsley, thyme, bay leaves, and garlic until soft and translucent. Let cool slightly. 
  2. Beat eggs, chia seeds and flax seed meal slightly and add to meat as well salt, and pepper. 
  3. Mix in the sauteed veggies by hand. Form into a long loaf on an oiled parchment paper lined baking sheet and coat top with the tomato sauce. 
  4. Bake for an hour and test for doneness. Depending on the shape of your loaf, it may need another 15 minutes.
Serving Size: Makes 8 equal servings
