Australian Anzac Biscuits (Cookies)
Ingredients:
1 cup quick cooking oats
3/4 cup flaked coconut
1 cup all-purpose flour
1 tsp baking soda
1 cup white sugar
1/2 cup butter
1 tbsp golden syrup
2 tbsp boiling water
Directions:
Mix together the oats, sugar, coconut, and flour. In a small
saucepan, melt the syrup and butter together over a low heat. Add the
baking soda and boiling water to the butter-syrup mixture and stir well.
Add the butter mixture to the dry ingredients and blend well. Drop by
the tablespoonful onto greased cookie sheets and bake at 350 degrees F
for about 20 minutes.
