Vegetables, noodles, and tofu (vegetarian, low fat, whole grain)
8 oz mushrooms
1 tablespoon olive oil
1/4 block extra firm tofu
2 medium bok choy
2 stems broccoli
2 zucchini chopped
1/4 cup raisins
1 teaspoon low sodium soy sauce
1 teaspoon chopped chives
salt and pepper to taste
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon dried chopped onion
whole grain noodles of choice
Cook noodles according to package directions
Chop mushrooms and put it in the frying pan.
Add the olive oil and cook on medium high for about 3 minutes.
Dice the tofu and bok choy, separating the leaves from the stems.
Add the bok choy stems, broccoli and tofu, stir for 3-5 minutes.
Add the bok choy leaves, zucchini, noodles, salt, paprika, garlic powder and chopped dried onions.
Cook and stir for a final 3-5 minutes.
