Slow Cooked Clean Eating Chicken Noodle Soup

  • 2 chicken breasts (whole)
  • 2 carrots, sliced
  • 1 celery stick, sliced
  • 2 spring onions, chopped
  • 2 garlic cloves, chopped
  • 1 1/2 Litres home-made chicken or vegetable stock
  • 1 1/2 bay leaves
  • 1/4 tsp dried thyme
  • 8 peppercorns

  1. Place all vegetables in the slow cooker
  2. Add herbs/seasoning to the stock and pour over the vegetables
  3. Place the chicken breasts in the slow cooker sitting on the vegetables, ensuring just covered with liquid.
  4. Cook on low for 5 hours.
  5. At the end of the cooking process, remove the chicken breasts, shred and mix back in. 
  6. If you have a favorite whole grain noodle/pasta, stir this in towards the end (allowing cooking time) to give the soup some more body.
