Baked Potato tips

Have you ever wondered how restaurants' baked potatoes are so crisp on the outside and moist on the inside? Here's a trick you can try next time you're baking potatoes.

Wash the skins throughly, pat dry. Use a utility knife to pierce each potato a couple of times. Take any type of vegetable oil and coat the skin. Roll the skin in kosher salt or sea salt. Place potatoes on a cookie sheet, lined with foil. Put in oven at 425 degree, bake for 1 hour. Remove and let stand for 5 minutes before cutting into. The best advice is to make sure, if you're baking several potatoes, that they are all about the same size so they all will be cooked, evenly. If you have monster potatoes...you may have to cook for an additional 20 minutes...
