I made a simple supper that I really liked. I think my favorite thing is just the versatility. I love that I can combine whatever veggies I feel like eating with it and it is yummy. It isn't really a recipe, just a simple technique that you are probably all doing anyway. But what I did was cook up a potatoe in a veggie broth with garlic and onions. The I added some kale and when it was cooked, I used an immersion blender. I could thicken it with cornstarch if I felt like as well. It was so yummy!
