I decided to throw my supper together with things I had in the house. I have been really working hard to stick to my diet and I came up with this recipe. I LOVE throwing things together and coming up with something yummy!
Kidney Beans and Rice
1 cup kidney beans, drained and well-rinsed
1 cup can low sodium tomatoes
1 cup corn
1/2 tsp thyme
1/2 tsp oregano
1/2 tsp cumin
1/2 tsp chili powder
1/2 tsp smoked paprika
salt and pepper (to taste)
1/2 tsp garlic powder (or 2 cloves garlic)
1/4 tsp cayenne pepper (or to taste)
1 cup Basmati rice
The rice is just leftover rice, so I just mix together and heat. I do mash half of the kidney beans to make a more pleasing texture.
