Beef & Bacon Chili (Low Carb)


  • 8 thick or 12 thin slices of bacon
  • 2 diced red bell peppers
  • 1 Tbsp minced or jar garlic
  • 1 lb ground beef
  • 1 Tsp cocoa
  • 1 Tbsp garlic powder
  • 2 Tbsp ancho chile pepper powder or Mexican-style chili powder
  • 2 Tbsp paprika
  • 1/4 tsp cayenne (or more to taste)
  • 2 tsp cumin
  • Salt and Pepper
  • 1 can roasted diced tomatoes (I used a 14.5 oz can because I wanted it really thick, but I would totally use 28 oz can if I was looking to make it more soupy)
  • ¾ cup beef broth (I left this out make it thicker)

  1. Dice bacon and cook until crisp
  2. Add peppers and garlic
  3. Add ground beef, cocoa, garlic powder, chili powder, paprika, cayenne, cumin
  4. Cook until beef is browned.  Drain. 
  5. Add diced tomatoes and broth and heat through. 
  6. Top with your favorite toppings.
I LOVE how easy this recipe is and how easy it is to double or triple to make a big batch for my big family.

Cauliflower "Mac" and Cheese Casserole

Low Carb Yummyness

Ingredients:
  • 1/2 teaspoon salt
  • 1 large head cauliflower, cut into small florets
  • Vegetable oil spray
  • .75 cup heavy cream
  • 2 ounces cream cheese, cut into small pieces
  • 1.5 cups shredded sharp Cheddar (.5 of it is used to top casserole)
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon garlic powder
  • 8 by 8-inch baking dish
  1. Preheat oven to 375 degrees F. Spray the baking dish with vegetable oil spray.
  2. Cook the cauliflower in the microwave or on stove top with boiling water until tender, about 5 minutes. 
  3. Drain well and pat dry between paper towels. Put the cauliflower in the baking dish and set aside.
  4. Bring the cream to a simmer in a small saucepan and mix in the cream cheese pieces until smooth. 
  5. Stir in 1 cup of the cheese, salt, pepper and garlic mixing until the cheese melts. 
  6. Pour over the cauliflower and stir to coat cauliflower. 
  7. Top with the remaining 1/2 cup cheese and bake until browned and bubbly hot.

Serves 4-6 people

Bacon Cheeseburger Skilet {One Pot}

While blog-hopping, I discovered this simple recipe that looks fabulous and that my family would love!  It can easily be doubled to serve my big family and so I wanted to save it here so that I can try it!

Bacon Cheeseburger Skilet {One Pot - Pasta too!}

  • 1 lb lean ground beef
  • 8 slices of bacon, cooked and chopped
  • 2 Tbsp dried minced onion flakes
  • 1 tsp garlic powder
  • 2 cups low-sodium beef broth
  • 1 (10 oz) can Rotel tomatoes (regular or mild)
  • 1/2 cup onion and chive cream cheese, softened
  • 8 oz campanelle pasta (or penne)
  • 1/4 tsp salt
  • 1/2 tsp pepper
  • 1 cup cheddar cheese, shredded

In a 12-inch oven safe skillet, cook ground beef until no longer pink. Drain fat. Add onion flakes,  broth, tomatoes, cream cheese, pasta, bacon, salt and pepper and stir.

Bring to a boil. Reduce heat to low and cover skillet. Simmer for 15-20 minutes, until pasta is tender.  

Remove skillet from heat and stir in half of the cheese. Top with remaining cheese. Broil until cheese is melted and bubbly.

Tex-Mex Chile con Carne



1 kg boneless pork tenderloin, trimmed of fat and silver skin, cut in large cubes
2 tbsp coconut flour
2 tsp salt
pepper
3 tbsp olive oil
2 onions, chopped
4 cloves garlic, finely chopped
3 Jalapeño peppers
1 green pepper
1 red pepper
2 - 4 Anaheim or banana chiles
1 tsp chili powder (or 2 fresh serrano chiles)
1 tsp cumin powder
2 tsp dried oregano
¼ c chopped coriander leaves
800g chopped tomatoes (canned or fresh)
2 tbsp tomato paste
3 cups beef or chicken stock
1 tbsp cocoa powder

Heat the oil in a large heavy casserole
D redge the meat with the coconut flour, salt and pepper and brown in the fat. Remove the meat to a bowl.
Meanwhile prepare all of the peppers by de-seeding and chopping.
Add more fat to the pan if necessary and sauté the onions and garlic until transparent. Add the peppers and stir 5 minutes until they start to soften.
Mix the spices and herbs together and add to the pan, stir 1 minute. Add the rest of the ingredients including the meat, stir to combine well.
Bring to a steady simmer and cook about 2 ½ hours until the meat is very tender and the liquid thickened. Or bake in a moderate oven for about 3 hours. 1/2 hour before serving add cocoa. 

Serve with all the usual Tex-Mex trimmings - guacamole, fat free sour cream, grated reduced fat cheese, and coriander leaves.

Newfoundland Wartime Cake (dairy and egg free)


In War times, Eggs, Butter, & Milk were rationed. Creative Cooks discovered this easy & economical recipe for making a cake. So it became known as " War Cake ".

Ingredients:
  • 2 cups water
  • 2 cups raisins
  • 1 cup light ( fancy ) mollasses
  • 1 cup sugar
  • 2/3 cup shortening
  • 3 cups flour
  • 1 tsp. soda
  • 3 tsp. cinnamon
  1. Boil the following: 
    1. water
    2. raisins
    3. molasses
    4. sugar
    5. shortening. 
  2. Let cool. 
  3. Sift together the following:
    1. flour
    2. soda
    3. cinnamon. 
  4. Add to cooled mixture. 
  5. Put in a greased tube pan & bake 1 hr. 350 degrees.

Pasta Sauce with ground chicken (low fat, clean eating, higher fiber)


Ingredients
  • 2 TBSP Olive Oil
  • 1 x Green Pepper (chopped)
  • 1 x Red Pepper (chopped)
  • 1 x Yellow Pepper (chopped)
  • 2 x Onions, medium (chopped)
  • 1 finely diced carrot
  • 2 stalks of finely diced celery
  • 3 x Garlic cloves finely chopped
  • 2 x large can Crushed Tomatoes, (796 grams)
  • 1 x large can Diced Tomatoes, (796 grams)
  • 2 LBS (910g) Extra Lean Ground chicken
  • 2 TBSP Italian Seasoning
  • 2 Tsp Pepper
  • Salt to taste
  • 1 Tsp Parsley 
  1. Brown chicken in pan and drain.
  2. In large saucepan fry olive oil, onion, carrots, celery, peppers, and garlic until soft.
  3. Add ground chicken and tomatoes.
  4. Add herbs
  5. Bring to boil stirring often.
  6. Reduce heat and cover for 20mins.  Enjoy.
  7. Serves 13 x 200g servings and works with any whole grain pasta of your choice. 
To make this like a Bolognese sauce add 1/2 - 1 cup of  condensed fat free milk (NOT SWEETENED) before serving)

Apple Cinnamon Steel-Cut Oatmeal (clean eating recipe!)


 
  • 2 apples, peeled, cored, cut into 1/2-inch pieces (2-1/2 to 3 cups chopped)
  • 1-1/2 cups fat-free milk
  • 1-1/2 cups water
  • 1 cup uncooked steel-cut oats
  • 2 tablespoons brown sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon ground flax seed
  • 1/4 teaspoon salt
  1. Coat inside of 3-1/2 quart (or larger) slow cooker with cooking spray. 
  2. Add all ingredients to slow cooker. Stir, cover, and cook on low for 7 hours. (Watch it carefully as some slow cookers cook faster than others.) 
  3. Spoon oatmeal into bowls; add optional toppings, if desired. (Recipe can be doubled in 6-quart or larger slow cooker. Increase cooking time 1 hour.)

Pancake Muffins


I tried something new today.  I had some pancake mix in my cupboards and I almost never use the mix as I find it just as easy to make my own.  Well today I was feeling sore from my fall last weekend and I didn't feel like spending a lot of time over a hot pan making pancakes enough for a family of 6 fairly large eaters.  So I tried something new.

Here is what I did:
  • Made the mix up according to directions 
  • Spooned it into muffins tins.  
  • Added different toppings to different ones (the chocolate chip were the most popular LOL). 
  • Cooked at 350 degrees for 15 - 20 minutes.  
The only thing I would change is next time I will cook them without the liners and just grease the muffin tins well.  If you want sweeter muffins, you could add a little sugar to the mix as well.

This was easy and everyone loved it!  And it is a quick way to make enough breakfast for a large family.  I will be doing it again for sure.

Pizza Spaghetti Casserole


Ingredients
  • 1 lb. Ground meat 
  • 1 16 oz. box unooked spaghetti noodles
  • ½ teaspoon salt
  • ½ teaspoon Oregano
  • ½ teaspoon garlic powder
  • ½ Cup Milk
  • 1 Egg
  • 2 ounces sliced pepperoni 
  • 1 (26 ounce) jar pasta sauce
  • 1 16 oz. can diced Italian style tomatoes
  • ¼ cup grated parmesan cheese
  • 1 (8 ounce) package shredded Italian cheese blend
  • Any other pizza toppings, you can add like Black olives, sausage, onions, green peppers, etc...
Directions:
  1. Boil water & salt for Spaghetti noodles, once it starts boiling, add noodles. 
  2. Brown meat in a separate frying pan. 
  3. Once noodles are cooked, drain and put in a casserole dish. In a separate bowl, combine milk & egg & whisk. 
  4. Poor over pasta & add jar of sauce, can of tomatoes, garlic powder, & oregano. 
  5. Mix all together well. On top of pasta mixture, layer the ground meat, then add a layer of pepperoni's. 
  6. Sprinkle Parmesan cheese, & Italian cheese. 
  7. And layer more pepperoni. 
  8. Bake in the oven at 350 for 30 minutes.

Homemade Laundry Soap Recipe



2 gal. hot water

1 bar of soap, grated

2 c. baking soda (not washing soda)

This recipe just calls for a bar of soap, basically the same soap that you use in the shower. I’ve read that Fels-Naptha is great for stain fighting, but this works.

  1. Grate the soap. 
  2. Put the grated soap in a saucepan, cover with water and cook on low until the soap melts. Be patient, it takes a while. 
  3. Now add 2 gallons of hot water into large bucket. Add the dissolved, melted soap and stir well.
  4. Add the baking soda and stir again.
  5.  Use a half a cup on regular loads and a full cup on heavily soiled loads. That’s it! After sitting your soap will be lumpy and gloppy, that’s normal, just stir well before use.

Homemade Tortillas


    2c. flour (can substitute 1c. whole wheat)
    1tsp. salt
    1tsp. baking powder
    1Tbsp vegetable shortening
    water

  1. Mix flour, salt, and baking powder. 
  2. Add shortening and mix with hand forming little “peas”. 
  3. Add water slowly until it forms a soft dough. 
  4. Pinch off 12 balls and roll on a floured surface. 
  5. Heat on cast iron griddle.

After a tortilla comes off the griddle, immediately put it in a kitchen towel wrapped up. Once the next one is done, put it in with the first one, and wrap it up again. Continue in this manner with the rest of the tortillas. The kitchen towel keeps the tortillas warm and the just the right amount of heat and moisture stays in to make the tortillas soft and flexible.

Mexican Lasagna


Ingredients:
  •     2 T. olive oil (optional)
  •     2 lbs. ground beef
  •     2 T. chili powder
  •     2t. ground cumin
  •     1/2 onion, chopped
  •     1 14 oz. stewed tomatoes
  •     1 C. taco sauce
  •     1 can black beans, drained
  •     1 C. frozen corn
  •     salt
  •     8-8in. flour tortillas
  •     2 1/2 C. cheddar cheese, grated
  •     2 green onions, chopped (optional)
  1. Preheat oven to 425°. Preheat large skillet over medium high heat. 
  2. Add ground beef and onion,brown and drain. 
  3. Season with chili power, cumin, then add tomatoes, taco sauce, black beans, and corn. 
  4. Heat mixture through 2-3 minutes, then season with salt to taste. 
  5. Grease Baking dish. 
  6. Layer meat, tortillas, cheese and repeat as needed. 
  7. Bake 12-15 minutes, until cheese is melted and bubbly. (May top with green onions) Serves 6-8.

    Plan ahead and cook the beans from dry, make your own tortillas and taco sauce and this meal ends up being an inexpensive dinner.

Lentil Chili



This recipe is one of our family favorites.  It fits nicely into our budget and I can make our money go farther if I use all lentils instead of the beef.  Our whole family LOVES lentil chili so I have to make a HUGE batch to satisfy everyone.  I can also make it stretch by serving it over rice, especially nice if we have company drop by unexpectedly.

Ingredients:
  • 2 onion, chopped
  • 2 tsp. cumin
  • 20 c. water
  • 2 lb. dry lentils
  • 4 tsp. salt
  • 4 c. salsa
  • 2-29 oz. canned tomatoes, crushed
  • 2 lb. ground beef
  • 2 tbsp. chili powder
  1. Brown ground beef with the onion, drain.  
  2. Add lentils and water. Simmer 1 1/2 hours.  
  3. Add remaining ingredients and simmer for 15 minutes.
Variations:  Omit meat and double the amount of lentils for a vegetarian dish.  Serve over rice.  Top with cheese and/or sour cream.

Ground Beef Stroganoff


Ingredients:
  • 2 lb ground beef
  • 2 med. onions, chopped
  • 1/4 c. flour
  • 1 tsp. garlic salt
  • 1/2 tsp. pepper
  • 2 lb. fresh mushrooms, sliced (you may do more or less)
  • 2 T. butter, melted
  • 2- 10 3/4 can cream of mushroom soup (substitute ‘from scratch’ varieties)
  • 16 oz. sour cream
  1. Brown ground beef, drain.  Add onion and cook until onion is tender.  
  2. Add mushrooms and butter, cook until mushrooms are tender.  
  3. Stir in flour,  garlic salt and pepper until mixed.   
  4. Mix in soup and place in crock pot.  
  5. Cook on low until a half hour before eating, then stir in sour cream.  (Everything is cooked when you add it to the crock pot, so there is no need to leave it in the crock pot all day.)
  6. Serve over pasta or rice

Cranberry Pork Roast


Ingredients:

4-5 lb. boneless pork loin
16 oz. jellied cranberry sauce
1/2 c. sugar
1/2 c. cranberry juice
1 tsp. dried mustard
1/4 tsp. ground cloves

Put the pork loin into the crock pot. Combine remaining ingredients and pour over roast.  Cover and cook on low for 6-8 hours.

Use the juices from the roast to make an AMAZING gravy.  We always serve this with mashed potatoes because it would be a shame to waste this gravy.
