Corny pancakes

Today for pancake day I made two kinds for fun. The corn pancakes were a huge hit.

Ingredients

1/2 cups milk
1 can creamed corn
1/2 cup flour
1 cup cornmeal
1 teaspoon baking powder
1 teaspoon salt
1 egg (lightly beaten)

Combine the flour, cornmeal, baking powder, and salt. Whisk to blend.

Add the milk to the dry ingredients and stir to blend.

Whisk in the beaten egg.  Add a little extra milk if the mixture seems dry.

Drop onto a hot, greased grill or drop in an iron skillet and fry until golden brown on both sides.

Serve hot with butter and syrup as for pancakes, or serve them as bread with butter.
