Another Quick and Easy One Pot Pasta (whole grain, low fat, vegetarian)
340 grams (1 package) Whole Grain Spaghetti or Linguine
2 tomatoes, chopped
1 cup chopped zucchini
1 onion, thinly sliced (about 2 cups)
6 cloves garlic, thinly sliced
1/2 teaspoon red-pepper flakes
a little fresh basil leaves torn
2 tablespoons extra-virgin olive oil,
salt and pepper
2 1/2 cups water
2 cups vegetable broth
Lots of freshly grated Reduced Fat Parmesan cheese, for serving (or a vegan variety)
Combine noodles, tomatoes, zucchini onion, garlic, red-pepper flakes, basil, oil, 2 teaspoons salt, 1/4 teaspoon pepper, and water in a large straight-sided skillet.
Bring to a boil over high heat. Boil mixture, stirring and turning noodles frequently, until noodles is al dente and water has nearly evaporated, about 9 minutes.
Season to taste with salt and pepper, divide among 4 bowls, and garnish with basil. Serve with Parmesan.
