Cheeseburger Soup (low carb, low fat, Paleo, Trim Healthy Mama S)
- 2 lbs of lean ground turkey (or lean ground beef)
- 1 onion, chopped
- 1 or 2 cloves garlic, minced
- 1 head of cauliflower, chopped
- 4 cups of chicken broth
- 1/4 cup cream
- 1 tsp garlic powder
- 1 cup shredded reduced fat mozzarella
- spinach, chopped (to taste, as much or as little as you like)
- Cooked ground meat with onion and garlic in a skillet.
- Added cauliflower and cook it until the cauliflower was cooked al dente.
- Pour this into a crockpot and added chicken broth, cream, garlic powder.
- After letting it simmer (approx 2 hours), add shredded mozzarella and spinach and leave it alone until dinner time (approx 2 hours).
