Baked Ham and Egg Cups (low carb, Trim Healthy Mama S, low fat)


This is a super easy recipe, and is always a hit!
  • 12 eggs (you could use scrambled egg whites to reduce fat, but I wouldn't)
  • 12 pieces of sandwich Ham
  • 1 onion-diced or minced
  • reduced fat cheese of your choice-grated
  • salt
  • pepper
    muffin baking tin
  1. preheat the oven to 350 degrees.
  2. Spray the muffin tin with cooking spray, or grease muffin tin.
  3. Place one slice of the sandwich ham into the muffin tin, so it forms a "bowl".
  4. Add some onion and cheese on the bottom of each "bowl", and crack ONE egg into each...add some more onion and cheese on top, salt and pepper to taste.
  5. Put into oven for about 10-15 minutes, or until egg is fully cooked.  Serve and Enjoy
