Oatmeal Loaf Cake (low fat, whole grain)
- 1 cup Honey (or sweetener of choice)
- 1/2 cup applesauce
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 3 eggs (at room temperature)
- 1 cup whole wheat flour
- 1 cup oats (quick, or non-quick work fine)
- 1/2 cup semisweet chocolate chips (optional, could also use raisins or nuts)
- 1 teaspoon vanilla extract
- 1 cup water
- Preheat oven to 375 degrees.
- Spray a loaf pan with non-stick spray
- In a mixing bowl combine the softened butter with the honey.
- Add eggs one at a time, mixing until combined.
- Add baking soda, baking powder, and vanilla extract.
- Add 1/2 the oats mixture and 1/2 the water.
- Add the flour.
- Add the remaining oats and water and mix well.
- Lastly, add the chocolate chips and mix only a few times until they are combines evenly throughout.
- Bake loaf for 25-30 minutes until brown and firm on top, and a knife comes out of the center clean.
