Oatmeal Loaf Cake (low fat, whole grain)

 
  • 1 cup Honey (or sweetener of choice)
  • 1/2 cup applesauce
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3 eggs (at room temperature)
  • 1 cup whole wheat flour
  • 1 cup oats (quick, or non-quick work fine)
  • 1/2 cup semisweet chocolate chips (optional, could also use raisins or nuts)
  • 1 teaspoon vanilla extract
  • 1 cup water
  1. Preheat oven to 375 degrees.
  2. Spray a loaf pan with non-stick spray
  3. In a mixing bowl combine the softened butter with the honey. 
  4. Add eggs one at a time, mixing until combined.
  5. Add baking soda, baking powder, and vanilla extract.
  6. Add 1/2 the oats mixture and 1/2 the water.
  7. Add the flour.
  8. Add the remaining oats and water and mix well.
  9. Lastly, add the chocolate chips and mix only a few times until they are combines evenly throughout.
  10. Bake loaf for 25-30 minutes until brown and firm on top, and a knife comes out of the center clean.
