Chocolate Cake (dairy free, egg free, fat free, whole grain, clean eating)


Ingredients:
  • 1 1/2 cups whole wheat flour
  • 1/2 cup cocoa powder
  • 1 3/4 cup honey (or sweetener of choice)
  • 2 teaspoon baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 2 cup brewed coffee (can substitute water)
  • 2 Tbsp. white vinegar
  • 3/4 cup applesauce
  1. Sift together flour, sugar, salt, soda, and cocoa.  
  2. Make three wells. Pour oil into one well, vinegar into second, and vanilla into third well. 
  3. Pour cold water over all, and stir well with fork.
  4. Pour mixed batter into a 9 x 13 inch greased cake pan. 
  5. Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes, or until tooth pick inserted comes out clean. 
I used some berries and fat free yogurt for a topping.  It was yummy!
