Avocado-Chocolate Chip Muffins (whole grain, clean eating, low fat)


  • 1 3/4 cups whole wheat flour
  • 1/2 cup Honey (or sweetener of choice)
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 large eggs
  • 2 tbsp applesauce
  • 1 rip avocado, peeled, pitted and mashed
  • 1 ripe banana mashed
  • 1 tsp pure vanilla extract
  • 1/2 cup dark chocolate chips (70% or greater)

  1. Preheat oven to 350, line muffin tin or spray with olive oil
  2. In large bowl combine flour, honey, baking powder and salt
  3. In medium bowl whisk eggs, applesauce, avocado, banana and vanilla.
  4. Add flour mixture and stir to just combined.
  5. Fold in chocolate chips
  6. Fill 12 muffin tins and bake about 25 minutes
