Ingredients:
- 2 chicken breasts (whole)
- 2 carrots, sliced
- 1 celery stick, sliced
- 2 spring onions, chopped
- 2 garlic cloves, chopped
- 1 1/2 Litres home-made chicken or vegetable stock
- 1 1/2 bay leaves
- 1/4 tsp dried thyme
- 8 peppercorns
- Place all vegetables in the slow cooker
- Add herbs/seasoning to the stock and pour over the vegetables
- Place the chicken breasts in the slow cooker sitting on the vegetables, ensuring just covered with liquid.
- Cook on low for 5 hours.
- At the end of the cooking process, remove the chicken breasts, shred and mix back in.
- If you have a favorite whole grain noodle/pasta, stir this in towards the end (allowing cooking time) to give the soup some more body.
