Old-Fashioned Newfoundland Baked Beans



Ingredients:
  • 2 lb. (1 kg) brown-eyes (or navy) beans
  • 1 medium-sized onion, sliced
  • 1/4 cup (50 mL) Ketchup
  • 1/4 cup (50 mL) brown sugar
  • 3/4 lb. (175 g) fat-back pork, sliced
  • Pinch of Pepper
  • 1/2 cup (125 mL) molasses
  • 1 tsp. (5 mL) dry mustard
  1. Wash beans. Add enough water to cover beans by 2 inches (5 cm). 
  2. Simmer until skins begin to crack (about 45 minutes). 
  3. Strain. Combine beans and other ingredients; add water to cover. 
  4. Place in a deep casserole or crock and bake, covered, at 250F (125C) for about 6 hours.
