Ingredients:
- 2 lb. (1 kg) brown-eyes (or navy) beans
- 1 medium-sized onion, sliced
- 1/4 cup (50 mL) Ketchup
- 1/4 cup (50 mL) brown sugar
- 3/4 lb. (175 g) fat-back pork, sliced
- Pinch of Pepper
- 1/2 cup (125 mL) molasses
- 1 tsp. (5 mL) dry mustard
- Wash beans. Add enough water to cover beans by 2 inches (5 cm).
- Simmer until skins begin to crack (about 45 minutes).
- Strain. Combine beans and other ingredients; add water to cover.
- Place in a deep casserole or crock and bake, covered, at 250F (125C) for about 6 hours.
