Newfoundland Pineapple (or Cherry) Balls

  • 2 cups coconut
  • 1 cup icing sugar
  • 1/4 cup butter
  • pineapple tidbits or maraschino cherries
  1. Combine butter, coconut and icing sugar. 
  2. Place pineapple tidbits or cherries in palm of you hand, roll mixture around fruit. 
  3. Roll in coconut or graham wafer crumbs. 
  4. Cool in refrigerator to set.
