Uncooked Oatbars

Here is an easy breakfast that is healthy and would be a great hit with the kids. I have two options here for you to consider:

Oatbars

Preparation Time: 20 minutes
Serves: 12

Ingredients:

6 cups of quick oats (4 whirled in the food processor until ground)
1/4 tsp salt
1/2 tsp cinnamon
1/2 + 2/3 c of agave syrup
3/4 c of coconut milk
1/4 to 1/2 c nut butter (optional if allergic)

Instructions:

Mix the dry ingredients.
Mix the wet ingredients.
Mix the dry with the wet.
Press into a pan and stick em in the fridge.
Cut em up & eat em up.

Soft & Chewy Raw Vegan Oat Bars

Ingredients:

    1 large ripe banana, mashed
    1 1/2 cups rolled oats
    1/2 cup wheat germ (or another 1/2 cup of oats)
    1/2 cup shredded sweetened coconut
    1/2 cup dried fruit
    1/2 cup chopped nuts
    1/4 cup mini chocolate chips (optional)
    1/2 cup pure maple syrup (agave syrup will work also)
    1/2 cup nut butter (such as peanut butter)
    1 tsp vanilla extract
    1/2 tsp salt

Directions:
  1.     Mix the above ingredients in a large bowl until well combined.
  2.     Line a 8x8 baking dish or tupperware with plastic wrap or foil.
  3.     Place the oat bar mixture in the pan and pat down evenly and firmly.
  4.     Cover and freeze for at least 6 hours or overnight.
  5.     Remove pan from freezer and cut into 10 rectangular bars.
  6.     Store in freezer for firm bars or refrigerator for soft bars.
After the bars firmed up, you can wrap each bar in plastic wrap and place them back in the freezer.
This way they are ready to grab and go!  ENJOY!
