On Sunday mornings, I like to make something yummy for my family for breakfast. Pancakes are always a good idea and making them vegan means I can have some too. Here is an easy recipe that has worked for me in the past. I love them topped with fruit or applesauce but syrup and icing sugar is a hit with my kids.
Vegan Pancakes
Servings: 3
Ingredients:
2 cups all-purpose flour (I am trying whole wheat)
2 tablespoons white sugar
2 tablespoons baking powder
1/2 teaspoon salt
2 cups water
2 tablespoon oil
1 tsp cinnamon
Directions:
1. Sift the flour, cinnamon, sugar, baking powder, and salt into a large bowl. Whisk the water and oil together in a small bowl. Make a well in the center of the dry ingredients, and pour in the wet. Stir just until blended; mixture will be lumpy.
2. Heat a lightly oiled (I use spray instead) griddle over medium-high heat. Drop batter by large spoonfuls onto the griddle, and cook until bubbles form and the edges are dry. Flip, and cook until browned on the other side. Repeat with remaining batter.
