Sunday's Rambling Thoughts

I love Sundays. I love my relaxed approach to the day. I always have a long list of things I want to do on that day, but I always just take my time and get at things when I get at them. I don't hurry, I just get up, nurse a cup of decaf, and relax. When I am done, I get up and make something special and different for breakfast for the family. Usually breakfast is big enough that we are picking at it all day. I get at the housework that I have fallen behind on. I do extra laundry, tidy up, clean the kitchen, just putter away at things on my to do list. At the end of the day, the house isn't perfect, but I am relaxed, and the house is better than it was when I got up.

Yesterday, Princess Belle and I were studying about the forest and one of the things we discussed were important things to have with you for safety reasons. Today, for fun, she was drawing pictures of the things that she had to take with her and she made sure to include a "First Date Kit". Which made us smile, it just sounds so much more fun than a "First Aid Kit".

Incidentally, today I made Cranberry Raisin Bread Pudding and served it with a home made caramel sauce.


Bread Pudding

Ingredients:

* 3 cups milk
* 6 - 7 cups cubed or torn stale bread
* 3/4 cup granulated sugar
* 1 teaspoon ground cinnamon or nutmeg
* 5 eggs, lightly beaten
* 1/4 to 1/2 cup raisins
* 1/4 to 1/2 cup dried cranberries.

Preparation:
Heat the milk just until scalded. Place bread cubes in a bowl; pour hot milk over bread. Cool. Add the sugar, salt, nutmeg or cinnamon, eggs, cranberries and raisins. Pour mixture into an 8-inch square baking dish. Bake in a preheated 350° oven for 25 to 35 minutes, or until set. Serve with a dessert sauce or whipped topping.
